Tuesday 3 and Thursday 5 August 2010 10.00am - 1.00pm Ristorante La Bucaccia, Via Ghibellina 17 Cortona

Experienced cheese maker Romano Magi is passionate about his craft and will lead you through a fascinating gastronomic garden of flavours while teaching how to make your own cheese in a short time. Also teaching tasting techniques and how to prepare a plate matching the right flavours and seasonings. Romano will transport you back to the Estruscan age, giving you historic details of the ancient cheesemaking art, when when shepherds, after milking would produce cheese pressed either into fresh herbs or wicker baskets. His interactive class will involve making Classic Pecorino, Ricotta and Raviggiolo as well as other fresh cheeses presented exclusively for the Festival. Chef Agostina will also explain how to combine cheese with various jams and fruit relish, and she will present recipes for the final lunch of the lesson.

The demonstration includes a lot of cheese, plus lunch with aperitif, first, second and dessert, all based with cheese, prepared by Romano and cooked by his wife chef Agostina at La Bucaccia restaurant € 30.
